COCONUT BALLS WITH APRICOT SEEDS, WITHOUT ANY SUGAR
Since I am not eating any sugar for almost a year I had to find a way to make desserts, tasty but without sugar. To replace sugar the best is to use stevia. Interesting is that stevia extracts are found to be 300 times sweeter than sugar. Using stevia you don’t need to worry about dental caries and tooth cavities. It also helps reducing blood sugar level, so it is a much better way to make your desserts sweeter than using sugar!
You can make the coconut balls with almonds or hazelnuts but as I am allergic to both I choose apricot seeds for the recipe I’m sharing here with you. My allergy is one reason, but another reason is that apricot seeds are one of the healthiest seeds. Apricot seeds have a B17 vitamin that we can’t get from any other food. There are different studies for and against apricot seeds, some of them are saying that these seeds are super healthy and killing cancer, some that they are toxic. I personally believe that it is healthy and I eat it quite often.
Coconut is one of my favorite fruits and it is always in my kitchen. Since I am fighting with candida, coconut oil and coconut flour is really important in my diet as it doesn’t affect fungi but even kills it. These coconut balls look a bit like Raffaello but taste different.
Here goes the recipe!
3 cups of coconut flour
3 cups of oats
2 spoon of coconut oil
2 spoon of cinnamon
1 spoon of stevia
2 cups of coconut or soya milk.
Put the coconut flour and oats in a blender and blend it for 30 seconds. Cut and add bananas, coconut oil, cinnamon, stevia, coconut milk and blend it for a half minute. Now you have to form balls with your hands, in the middle put one apricot seed (almond or hazelnut if you prefer) and roll it in the coconut flour. When you finish all, sprinkle with cinnamon on the top and your healthy dessert is ready.
